An Eclair is an oblong pastry made of choux dough that is filled with cream and covered with chocolate icing. Talking of Eclair, the dough is similar to those used in profiteroles, and it’s piped into an oblong shape with a pastry bag and baked until crisp on the inside and hollow on the outside.

The pastry is then filled with vanilla, coffee, or chocolate-flavored custard (crème pâtissière), whipped cream, or chiboust cream, and iced with fondant icing after it has cooled. 1st Pistachio and rum-flavored custard, fruit-flavored fillings, and chestnut purée are some of the other filling options. In certain cases, the coloring is caramel, in which case the dessert is known as a bâton de Jacob.
